Why does omega 3 algae oil contain ascorbyl palmitate?

Omega 3 fatty acids are very unstable by nature.
Ascorbyl palmitate is one of the substances used to provide optimum protection for the active ingredient.
In chemical terms, this is an ester of ascorbic acid (vitamin C) and palmitic acid (natural fatty acid),
This makes the vitamin C fat-soluble and can therefore perfectly protect the omega-3 fatty acids from oxidation, which ensures that the algae oil remains stable for longer.
Ascorbyl palmitate is broken down again in the gastrointestinal tract into its original substances vitamin C and palmitic acid and digested as usual.
